The ingredient of Rich Beef Cassoulet
- 2 cups fresh breadcrumbs
- 2 tablespoons chopped fresh flat leaf parsley leaves
- 1 tablespoon fresh thyme leaves
- 2 1 2 tablespoons olive oil
- 500g extra lean beef chipolata sausages
- 4 cups baked beans with 1 4 cup shredded ham
- 1 cup frozen peas corn and capsicum mix

- preheat oven to 200c 180c fan forced place breadcrumbs in a bowl add parsley thyme and 2 tablespoons oil season with salt and pepper stir until well combined
- heat remaining oil in a medium heavy based flameproof casserole dish over medium high heat add sausages cook turning for 10 minutes or until just cooked through add bean mixture and vegetables bring to the boil remove from heat sprinkle with breadcrumb mixture transfer to oven
- bake for 30 minutes or until breadcrumb mixture is golden serve
