Beef Bracciole With Soft Polenta


Rolls of beef with a cheesy breadcrumb filling makes a delicious family dinner, plus the leftover sauce can be used to create other nutritious family meals.

The ingredient of Beef Bracciole With Soft Polenta

  • 2 1 4 cups fresh breadcrumbs
  • 1 3 cup chopped fresh flat leaf parsley leaves
  • 1 egg lightly beaten
  • 3 4 cup grated parmesan
  • 450g beef schnitzels uncrumbed
  • 6 long slices prosciutto
  • 1 tablespoon olive oil
  • 2 garlic cloves finely chopped
  • 1 cup dry white wine
  • 2 x 400g cans diced tomatoes
  • 3 1 2 cups massel chicken style liquid stock
  • 3 4 cup instant polenta
  • fresh flat leaf parsley leaves to serve

  • combine breadcrumbs parsley egg and 1 2 cup parmesan in a bowl season with salt and pepper place beef slightly overlapping between 2 pieces of plastic wrap using a meat mallet pound beef pieces together remove and discard plastic wrap arrange prosciutto slightly overlapping on beef top evenly with breadcrumb mixture roll up to enclose filling tie with kitchen string at 2cm intervals to secure place on a plate cover with plastic wrap refrigerate for 30 minutes
