- 1 cup roughly mashed banana
- 120g tub apple puree
- 1 4 cup coconut oil
- 1 egg
- 1 2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 1 2 cups wholemeal self raising flour
- 1 2 teaspoon baking powder
- 1 4 cup reduced fat milk
- 1 3 cup pecans finely chopped
- 125g strawberries cut into 1cm pieces
- smooth reduced fat ricotta to serve

- preheat oven to 180c 160c fan forced grease a 7cm 11cm x 21cm loaf pan line with baking paper extending paper 2cm above edges of pan on all sides
- reserve 1 tablespoon of cereal place banana apple coconut oil egg sugar and vanilla in a food processor process until almost smooth add flour baking powder milk 1 4 cup pecans and remaining cereal pulse until just combined
- spoon mixture into prepared pan smooth top sprinkle with strawberries and remaining pecans lightly crush reserved cereal sprinkle over top bake for 1 hour 10 minutes or until a skewer inserted into the centre comes out clean stand in pan for 10 minutes transfer to a wire rack to cool slice and serve with ricotta
